Ingredients: water, mustard seeds, vinegar, chilli (spirit vinegar, water, salt, corn starch): salt 18%.

Did you know? The Espelette chilli pepper is cultivated in the Basque country in the de-partment of the Pyrénées-Atlantiques. It takes its name from the village of Espelette. Originally from South America, it was introduced into the Basque country in the XVI or XVII century.  
The Espelette chilli pepper has had AOC classification since 1 June 2000, upgraded to AOP (Apellation d'origine protogée) on 22 August 2002. The official name for classifica-tion purposes is Piment d'Espelette or Ezpeletako Biperra.
On the Scoville scale, it has a value of four and therefore is no stronger than pepper. On the other hand, it has much more flavour since it is laid out to dry in the sun for a long time. Of course, it is greatly appreciated in Basque cuisine, spicing up dishes such as piperade, axoa (veal stew) and Basque chicken.
